- 3 eggs
- 2 T sugar
- 1/4 t salt
- 2 c flour
- 1 t baking soda
- 1 t baking powder
- 2 c buttermilk

1. separate eggs, placing whites in a small bowl, yolks in a medium bowl. beat whites at high speed until stiff peaks form; set aside.
2. with electric mixer at medium beat the egg yolks until slightly thickened. gradually add sugar and salt, beating until light and fluffy.
3. sift together remaining dry ingredients. at medium speed, beat them into egg-yolk mixture, alternating with buttermilk, until thoroughly mixed. 4. with rubber spatula gently fold egg whites into batter until well combined. for ease of pouring transfer batter to something with a pouring spout. 5. cook in a preheated, greased aebelkiver or monk pan, filling each depression barely full, and turning when golden.
makes about 18 aebelskivers.
