Casserole Bread

- 1 pkg yeast
- 1/2 c warm water [105-115 f]
- 1 t salt
- 1/2 c lukewarm milk [scalded & cooled]
- 2/3 c soft butter
- 2 eggs
- 3 c flour [omit salt if using self-rising]
- softened butter

Dissolve yeast in warm water in a large mixer bowl. Add milk, 2/3 c butter, eggs, salt and 1 c of the flour. Beat on low speed for 30 seconds. Beat at med speed 2 min. Stir in remaining flour until smooth. Cover and let rise until double, about 30 min. Stir down batter 25 strokes. Spread evenly in a well greased 2 qt casserole. Cover, let double, about 40 min. Heat oven to 375 f. Place on low rack so that top of casserole is in center of oven. Bake until brown, 40-45 min. Immeduately remove from casserole and brush top with butter.

Cheese: stir in 1 c shredded cheddar or swiss [about 4 oz] & 1/2 t pepper with second addition of flour.

Onion-dill: stir in 1 small minced onion and 1 T dill with second addition of flour. Brush top with butter and sprinkle with sesame or poppy seed before baking.
