Deep-frying Batter [Tempura]

-6 T flour
-6 t corn starch
-3 t baking powder
-1 egg white
-1/4 t salt
-7 T ice water

1. Combine dry ingredients.
2. Add egg white and ice water and stir until the big lumps are gone. Small lumps are okay.
3. Dip in fich chunks, raw mushrooms, onion rings, cauliflower chunks, raw shrimp, etc. The stuff to be dip should be cold when dipped.
4. Deep-fry at 350 F. for 10-15 minutes. Drain well immediately. Check the first few for doneness, and adjust cooking time.

Notes: The trick is to have the batter as cold as possible and the oil hot. If you have lag time, stick the batter in the freezer between frying. Only fry a little at a time so the oil temperature doesn't drop too much. To change this to a beer batter, just substitue ice-cold beer for the water.
