My Favorite Marinade and Jerk

1/4 c worcestershire sauce
2 T olive oil
2 T minced fresh garlic
1 T dill seed or weed, ground
1 pinch ground coriander
1 pinch paprika
1 t ground black pepper
couple dashes tabasco sauce
[optional] 1/4 cup strong beer
[optional] 2 T soy sauce

If using as a marinade for beef or pork let the meat sit at least 4 hours in the marinade.

If using as a jerk combine the dry stuff with 3 T coarse salt and double the black pepper. Combine the wet stuff separately. Layer beef that has been sliced thinly along the grain with the dry mix, then pour the wet mix over the whole [in a container with a leak-proof cover]. Let marinade at least overnight, turning occasionally. Jerk in your usual fashion.
