Push & Shove It #2, or Spring SkilletThis dish is what you make in the spring when the first vegetables appear in the garden, but there isn't enough of any of them to make a dish.
Fry a couple of slices of bacon per serving, and save the grease. Crumble the bacon and set aside. Mix half flour and half corn meal in a bowl for dredging. Salt and pepper as desired. Cube squash such as zucchini or yellow squash into about 1/2-inch to 1-inch squares, rinse to moisten, and dredge in flour mixture. If you have some early grean beans they can be thrown in. Cut green onions into about 1-inch pieces, and toss in after the vegetables are cooking. Fry until the squash is golden but the onions aren't burnt. If desired throw some coarsely chopped fresh greens in on top, put a lid on, and steam for a few minutes more. Put the bacon back in and serve hot.
