Push & Shove It #3, or the Potato Version

Cut up a couple of slice of fatty bacon and start frying them in a medium to medium-high skillet. Thin slice some potatoes and add them to the skillet as soon as there is enough grease to keep them from sticking, and add salt and pepper as desired. When the potatoes are slightly golden add some chopped onion. When the onion gets slightly translucent, Put a lid on the skillet and reduce the heat to medium low. Cook until the potatoes are just done, turning only when necessary. When the potatoes are done, break a few eggs over the mess and turn the potatoes to spread the egg around. Put the lid back on and steam until the egg sets. Serve hot. The only condiments that really should go with this dish are ketchup or hot sauce.
