Shrimp Butter

- 1/2 c soft butter
- 1/4 cup mayo
- 8 oz cream cheese-softened - 3 T chives
- 1 can [4 1/4 oz] broken shrimp-rinsed and drained
- 1 T lemon juice

mix first 3 ingredients until fluffy, add chives, shrimp and lemon juice, beat until well mixed. store in refrigerator, serve with crackers. makes about 2 cups.

Variation: For Smoked Salmon spread use about 4 oz smoked salmon, and delete the shrimp and lemon juice.

Variation #2: For either version add 1 T chopped dried chili pepper, for color and zing.

Serve with assorted crackers and/or breads.
